White truffle gourmet dinner

Mid-October… the leaves are falling from the trees, the cold weather is knocking at the door and the days are getting shorter…  as a summer, beach and sun lover all that are baaaad news!

But all right, even autumn can have some positive aspects, an example? Truffles!!!!!!

I’m seriously in love with them and just the thought of having a big white truffle on my plate makes my mouth water.

So, last night I cooked a gourmet white truffle dinner that made me feel sooo fancy!

I would like to share with you some information about “the diamond of the kitchen” (as French gourmet Jean Anthelme Brillat-Savarin called truffles) and the quick and easy recipes!

The truffle is a pretty strong-smelling underground fungus that resembles an irregular and rough-skinned potato. It is considered a culinary delicacy and found, especially in Italy, with the aid of trained dogs.

There are many different species of truffle and the most common are: black, summer black and white. The white one (my favorite!!) is the more valued and is found mainly in the Piedmont region in northern Italy. It has a distinct aroma and an intense earthy flavor that can transform pasta, eggs, and raw meat (tartare) into exquisite experiences. 

Talking about my dinner I used the adjectives gourmet and fancy beacuase the truffle (as said, especially the white one) is pretty expensive as is a wild and natural product and it can’t be cultivated or controlled. Today is priced around 3.500€/kg but is subjected to swing price depending on its availability.

For the ultimate truffle experience you should head to Piedmont during fall time when the town of Alba hosts the International White Truffle Fair. But if you’re spending a weekend in Milan or other cities you can find it in local street markets, specialized shops or supermarkets.

The recipes are quick and easy, the most important thing is the quality of the ingredients.

TAJARIN WITH TRUFFLE

Buy fresh tajarin and cook them in salted boiling water for 5 minutes.

Gently clean the truffle with the help of a soft-bristled brush and a cloth.

Melt the butter in a large skillet with some salt.

Drain the tajarin and place them in the skillet to season them with the butter.

Grate white truffle on top.

Buy super fresh beef fillet and cut it into julienne strips and then into cubes.

Season it with pepper, salt and truffle oil.

Make an handmade ball of the steak mixture, place a raw egg (fresh!!) on top of it and season lightly with some more drops of  truffle oil.

Grate white truffle on top.
